From a purely mechanical (Keeping seaweed/grass/gunk out of jetdrive) standpoint, is it better to cross shallow water and seagrass areas in a jetboat at no-wake speeds or with the bow on plane?

It’s better to go faster if your sure there are no solid obstacles in the water. The faster the engines working the less likely it will be that debris will get caught in the intake. Stuff will enter for sure but with enough force the turbine should chew up and spit out reeds and grass. Be absolutely sure you aren’t in danger of hitting rocks or stumps before you speed up though.
Jets **** water from the bottom of the hull shallow water causes damage to the pumpAs dirt silt sand rocks weeds anything that will fit threw the grill goes So best either go fast and stop when in deep water to clean pump out or go around
